Monday, January 21 is the Martin Luther King, Jr. Day of Service. This federal holiday is observed annually on the third Monday in January to honor the legacy of Dr. King, a civil rights leader who advocated for justice, peace, and righteousness.

We are always doing things to innovate the menus and service while at the same time increasing and promoting health choices and nutrition in our children.

  • Chicken Cordon Bleu Burgers - Grilled Chicken Breast   topped with ham and cheese.  Our house dressing plus lettuce and tomato made this a wonderful lunch
  • Whole wheat muffins (honey, carrot, linaza y girasol)
  • Pan de pan de granola

Garlic: Roast it!

Pretty much every cuisine around the world has dishes that involve garlic. So why have so many cultures embraced this versatile cooking ingredient? It smells so good while cooking, it makes everything taste better and it is super nutritious! Garlic gives the ‘yum factor’ to many dishes… but have you ever tried roasting it?

Here’s how to roast garlic:
  • Wrap unpeeled heads of garlic sprinkled with olive oil in a tin foil bundle and roast in a 350-degree oven for 30-40 minutes until soft and deliciously sweet. You can serve it alongside roasted vegetables, beans, poultry or meat or as a delicious spread for a toasty whole-grain bread.
When using minced garlic to obtain the maximum health benefits, after peeling and crushing it, let it sit for 10-15 minutes before cooking with it, this allows the health promoting phytochemical, alliicin, to form! The Super Crew calls them fight-o-chemicals because they fight off disease.

Don’t forget to get the kids involved in cooking! They can smell the garlic before and after it is roasted – discuss how it changed, sprinkle the olive oil over the garlic, wrap up the tin foil bundle and set the timer. Garlic is one of Super Crew kid Carlos’ favorite food.

Having company?  Here’s a healthy and easy appetizer that could also serve as a family dinner with a side salad.
1) Cut 100% whole-wheat sandwich thins into four trianges and lay them onto a heated pan.
2)  Add lots of grated dried rosemary and garlic -sometimes you can buy this in a pepper like grinder to save a step.
3) Spray some olive oil and flip the sandwich thins over in a couple minutes.
4) Make or buy dips.
  • Here’s a healthy home made pesto made with fresh basil leaves from the garden, olive oil and parmesan or locatelle.
  • A bruschetta with chopped olives, mushrooms and red peppers.
  • Hummus with chopped garlic and chipote spices.
5) Don’t forget to get the kids involved in easy food preparation steps -they’ll be more likely to try a dip.  They can cut the olives with a plastic knife, use spray oil and mix together ingredients. If this is your dinner, they can also help prepare a side salad.

This fun, delicious and easy 1-2-3 potato recipe is adapted from “L’Exquisit” Blog. You can’t go wrong with potatoes, garlic, parsley, and olive oil!!
It is just a different way of preparing the potatoes, always present in the holiday table.
Ingredients:
  • 4 medium-sized potatoes
  • 6 cloves garlic – chopped
  • 1/2 c fresh chopped parsley
  • 1/4 c olive oil
  • Salt and Pepper, to taste
Directions:
  1. Pre-heat the oven 350 degrees F and cover a large baking pan with aluminum foil.
  2. Using a mandolin (Careful! Always use the security guard) slice the potatoes in circles and set aside. In a small bowl combine the rest of the ingredients.
  3. Arrange the potato circles one of top of the other in the pan to form small towers (about 4-5 potato circles of similar size per tower) and in between each layer, add a small amount of the oil, garlic and parsley mix. Have the kids help create the layers.
  4. Place in the oven for about 40 minutes and enjoy!

In 1621, the Plymouth colonists and Wampanoag Indians shared an autumn harvest feast that is acknowledged today as one of the first Thanksgiving celebrations in the colonies. For more than two centuries, days of thanksgiving were celebrated by individual colonies and states. It wasn't until 1863, in the midst of the Civil War, that President Abraham Lincoln proclaimed a national Thanksgiving Day to be held each November.

Minnie Debuts Unchanged in Electric Holiday Campaign for Barneys  

 Parents want to ensure their parenting style has long-term positive effects on their children’s emotional and physical well-being. Talking about weight and health in the right way is an important part of fostering a healthybody image and may also help decrease eating disorders later in life.
So watch out parents!  There’s a new campaign in town and it features a super skinny stretched out Minnie! She’s not the Minnie we’ve grown up with – this one looks like she could be blown away by a light breeze. Barneys New York and The Walt Disney Company are releasing a 2012 Holiday Campaign featuring a mix of fantasy and reality as Minnie Mouse dreams of attending the famed fashion shows in Paris and is transformed into a fashion model.
Creative director of Barneys New York, Dennis Freedman, stated, “The standard Minnie Mouse will not look so good in a Lanvin dress.” So why, then put her in the campaign? Sadly, they are even selling vinylmation figures of Skinny Minnie for the holidays and we know that kids will be asking for these.
It’s wrong on so many levels… but to see Minnie suddenly grow several feet taller, and cut her original weight by more than half is appalling. In the United States, as many as 10 million females and 1 million males are fighting a life-and-death battle with an eating disorder such as anorexia or bulimia. What kind of message is Disney sending to our kids? Especially with 40% of 1st to 3rd grade girls already struggling with body dissatisfaction and that’s just the age that Minnie appeals to!
Tween’s sense of body image is influenced by not understanding what is happening to their bodies, strong media influence through a constant bombardment of television and magazines, all combined with peer pressure and the self-consciousness of puberty. With an increased desire for acceptance and judgment about what is perceived to be normal, body image issues that arise during these years can cause serious problems when taken to an extreme. When you check out Skinny Minnie, you’ll see just how extreme it is!
So what can you do with your kids to combat our toxic environment?
Increase awareness- Talk with your child about how confidence can be affected. Start an open dialogue so that your child can feel comfortable sharing the pressures he or she may be experiencing, especially when it is time for puberty.
Focus on Strength- Emphasize health benefits from foods such as strong bones and teach your children how fueling with a variety of foods from all food groups provides energy and strength. Encourage your children to look at healthy food as power, not something leading them to counting calories or weighing themselves all the time.
Discuss Marketer’s Intentions – Explain how companies capitalize on individual’s fears, desires and concerns to make money. Teaching your children that Barney cares about the bottom line and not their well-being may help them understand the distortion of the campaign.

UPDATE:  This morning, Women’s Wear Daily showed us a preview of the Electric Holiday campaign featuring Minnie Mouse and other Disney characters at a fictionalized Paris Fashion Week. Although, we couldn’t help but notice Minnie’s traditional depiction as opposed to the preview image that Barneys released a few months back. With her height and frame back to normal, we can only assume this alteration is due to the controversy that surrounded the slenderizing of Minnie’s image.

  • Blend frozen cherries with a couple tablespoons of sweetened yogurt
  • Mix frozen raspberries with chocolate yogurt in the blender
  • Assemble homemade ice-cream sandwiches with whole grain graham crackers and low-fat ice-cream
  • Make frozen banana treats by dipping them in low fat yogurt, rolling them in a healthy granola and then freezing
  • Enjoy Rice Krispie Treats with high fiber cereal and use half the required butter
  • Have the kids help create yogurt parfaits with low-fat yogurt, a cut up fruit, and a whole grain cereal
  • Cook Quinoa with cinnamon, raisins, and a little sugar or honey
