Monday, January 21 is the Martin Luther King, Jr. Day of Service. This federal holiday is observed annually on the third Monday in January to honor the legacy of Dr. King, a civil rights leader who advocated for justice, peace, and righteousness.

We are always doing things to innovate the menus and service while at the same time increasing and promoting health choices and nutrition in our children.

  • Chicken Cordon Bleu Burgers - Grilled Chicken Breast   topped with ham and cheese.  Our house dressing plus lettuce and tomato made this a wonderful lunch
  • Whole wheat muffins (honey, carrot, linaza y girasol)
  • Pan de pan de granola

Garlic: Roast it!

Pretty much every cuisine around the world has dishes that involve garlic. So why have so many cultures embraced this versatile cooking ingredient? It smells so good while cooking, it makes everything taste better and it is super nutritious! Garlic gives the ‘yum factor’ to many dishes… but have you ever tried roasting it?

Here’s how to roast garlic:
  • Wrap unpeeled heads of garlic sprinkled with olive oil in a tin foil bundle and roast in a 350-degree oven for 30-40 minutes until soft and deliciously sweet. You can serve it alongside roasted vegetables, beans, poultry or meat or as a delicious spread for a toasty whole-grain bread.
When using minced garlic to obtain the maximum health benefits, after peeling and crushing it, let it sit for 10-15 minutes before cooking with it, this allows the health promoting phytochemical, alliicin, to form! The Super Crew calls them fight-o-chemicals because they fight off disease.

Don’t forget to get the kids involved in cooking! They can smell the garlic before and after it is roasted – discuss how it changed, sprinkle the olive oil over the garlic, wrap up the tin foil bundle and set the timer. Garlic is one of Super Crew kid Carlos’ favorite food.

Having company?  Here’s a healthy and easy appetizer that could also serve as a family dinner with a side salad.
1) Cut 100% whole-wheat sandwich thins into four trianges and lay them onto a heated pan.
2)  Add lots of grated dried rosemary and garlic -sometimes you can buy this in a pepper like grinder to save a step.
3) Spray some olive oil and flip the sandwich thins over in a couple minutes.
4) Make or buy dips.
  • Here’s a healthy home made pesto made with fresh basil leaves from the garden, olive oil and parmesan or locatelle.
  • A bruschetta with chopped olives, mushrooms and red peppers.
  • Hummus with chopped garlic and chipote spices.
5) Don’t forget to get the kids involved in easy food preparation steps -they’ll be more likely to try a dip.  They can cut the olives with a plastic knife, use spray oil and mix together ingredients. If this is your dinner, they can also help prepare a side salad.
